You need to be flexible so you can get to the ball faster. You also need it so you are able to jump higher. Being flexible is also good for setters so they can put the ball where the hitter needs it. It's also good for hitters so they place the ball on the opponents court where they would like.

you dont necessarily need to be flexible to be a gymnast i am a level 7 in gymnastics and i cant touch my toes but being flexible makes it easier
