Aside from head coaches (also wearing caps) quarterbacks are on camera on the sideline more than anyone else. Thus they are financial compensated for wearing an authentic NFL sideline cap or beanie that fans can buy in stores.

The caps that Amish women wear are commonly called "prayer caps" or "head coverings." These caps are typically white and are worn as a symbol of modesty and humility.
Water polo players wear caps that protect their ears from injury if they get hit by a fast ball. The caps also help identify players and teams: The home team wears dark caps, away team wears light caps. Goalkeepers wear red caps. Each player also has a number on their cap to identify them like other sports feature on jerseys.
Girls wear caps to school for the same reasons boys do. They could just like to wear caps, they might be on a sports team, or any variety of reasons, but mainly they wear them because they want to.
It keeps the sweat out of their eyes. Football players sweat a lot under those helmets and when they take them off, it will roll into their eyes. Some guys wear the skull caps under their helmets for the same reason, and so that their helmet doesn't pull their hair out when they take it off.
