First off, this never actually happens; most people have heard of this by watching "Slapshot." But in principle it would create a jagged surface to cut an opponent. Like putting barbed wire on a boxing glove. Maybe it happened in like the 1960's in the minor leagues or something but c'mon.

Why do refs break hockey fights up so fast?
It is at the referee and/or linesmen's discretion of when to separate players before or during a fight. If the officials feel that the players are too far apart from each other before engaging in a fight, the officials may put themselves between the players and prevent the fight from starting.
What sports have penalties?
If you are in the penalty box, you are playing hockey. Hockey is the only major U.S sport that does not have fouls. When a foul or fight occurs in hockey, you are subjected to the penalty box for a certain amount of time. If you are in a fight in hockey you are allowed to continue to fight until at least one player has hit the ice then it must stop, and once that is over with both players must go to the penalty box.
