If you live in Europe, you can usually start playing field hockey at your primary school (grades kindergarten and up.) I don't live in Europe, so I will let someone else elaborate on that.

If you live in the USA (where I live), Field Hockey usually starts at the middle school/junior high level (grades 7-8). Depending on where you live, you can sometimes play as a recreational, "fun" kind of thing at a rec center or go to camps hosted by your local middle/high school. This is usually more common on the east coast and in California.

Once you begin playing more seriously, you can join a club. There can be any number of clubs in your area. With your club team, you play with others from all around your area, and you go to tournaments such as the Disney Field Hockey Showcase for U16 and U19 teams, held in February (there is also a Jr. Showcase held in July for U14), and National Field Hockey Festival (held over Thanksgiving, in November.)
