Fielding is more commonly applied to bat sports; Baseball, softball and cricket are the main ones. The only use of the word/term 'fielding' in Field Hockey would be "fielding a team", as in being able to put a team on the field of play for a match; this usage is rare. You may have been thinking of the term 'fieldy', a condescension used by goalkeepers to deplore a nongoalkeeper's lack of real skill.
