Two players are on each team. For the 2008 Beijing Olympics, the US has eight players, two mens teams and two womens teams.

There are many different factors that weight in for the selection of each countries Olympic teams. Players recovering from injury or simply do not want to play for other personal reasons. Also, in many countries, they limit or do not let "professional players" (Like those playing in the Euro leagues) because of limitations by team. So there is no definite answer but most teams do field the best possible, obviously.
