Sensei is the Japanese word for teacher. Many styles of Karate will refer to their instructors as sensei. However, lower graded black belts who instruct may be referred to as senpai, meaning senior student, and highly graded or senior black belts will be referred to as Shihan/hanshi meaning master or expert. Some of these senior grades may choose to be referred to as sensei, as a way of being less removed from his/her students

A teacher of karate is called Sensei. A really high ranked instructor who has earned the respect of their students may be referred to as Hanshi. A traditional martial artist is humble and will never ask to be called by their title, it is up to the other students to teach them the proper terminology. We call our Grandmaster (10th Dan) Sensei when talking with him, but refer to him as Hanshi or Grandmaster when we are talking to others.

For example: Sayuri => Sayuri-sama. (correction - Sensei means teacher, there are a few words that you use for master, depending on the situation.)
