Face up would be best, putting a band-aid over it before you get into bed will protect it.

You physically CAN, but I wouldn't... I wouldn't swim in anything only a day after. They can get infected by your clothes rubbing against them, I wouldn't chance a dip in fish poo infested water. It's not a good idea. You're almost certain to get an infection. I am lifeguard and a competative swimmer so I had to get back in the water within a week of piercing my belly button. I recommened using Tagaderm which is a clear bandage that moves with your skin and will protect it from anything in the water. You can get it from any Rite Aid or Walgreens type store in the bandaid department.

Wait as long as possible before you start surfing after getting the piercing. Water is FULL of bacteria so it increases your risk of infection. You can wear water-proof bandages to stop the piercing from getting too wet and to provide protection against hitting it. Be sure to rinse it with a saline solution as soon as you can after surfing.

You should have no problem with a belly ring. The piercing goes through the skin on your stomach, not your abdominal muscles. Your abs protect your insides, they'll be safe from your piercing.
