It would be very difficult to say who the most famous player is. Some would say players like Christy Ring or Mick Mackey. There are many others. Jack Lynch was a great hurler and Gaelic footballer in the 1940s and went on to become involved in politics, eventually becoming leader of Ireland's largest political party, Fianna Fáil, and then Taoiseach (the official title for an Irish head of government).
A question like that could never be answered as even the experts would have different opinions. There is all the factor that many of the great players are long dead and no one alive today would have seen them play and there would be no video footage of them. So it is impossible to compare them to modern players. Also, the game itself has changed and that affects how well players can perform, as does the nature of the opposition. So while a list of potential candidates could be given, for all of these and many other reasons, a definite answer could not be given.
But one way of finding out the more recent best player would be to check R.T.E sports for the most man of the matchs awards givin to a single player

There is no legal tackle in Gaelic football. The closest to one is that you can hit another player shoulder to shoulder. As to how to foul, there are all sorts of things that constitute fouls, like pushing a player, tripping him, pulling him, pulling his jersey, punching him and so on.

The first All-Ireland Finals, for the sports of Gaelic Football and Hurling, were held in 1887. There are different grades, like by ages or colleges and many others. So since 1887 thousands of people have won All Ireland GAA Football medals in Gaelic Football alone. So it would be impossible to list them all here.
