It really depends on the type of defensive end , for example a 4-3 end is usually pretty quick (Freeney for the Colts ran a 4.4 40 in the combine) while an end in a 3-4 defensive scheme is usually bigger and not primarily used as a pass rusher, instead those teams use the outside linebackers to rush the qb and keep the DE to stop up the line or the run game (think Clay Matthews for the Packers or Demarcus Ware for the Cowboys). Overall a defensive end in pro football runs around a 4.85 and usually the faster ones are on a traditional 4-3 and the bigger ones in a 3-4 set.
