well, you can keep a wristband or hair-tie on your wrist and swap it from one hand to another representing whose centre pass it is.
Firstly, its an umpire... But different umpires may chose to use different hand actions. For a contact some may hit their right shoulder with their left hand or some may tap the top of their right hand... What im trying to say is it depends on the level and the umpire... hope that helped :)
Wear your teams uniform and if you have a netball it would be a good idea to take that also so you can practise before hand. It is also a good idea to take a water bottle and some snacks to eat when you are off.

When you use one hand to throw a ball in netball it is called a shoulder pass and they are usually used for longer didtance throws.
Turn signals are definitely preferred. Most drivers don't look for hand signals, but, they do look for turn signals. Some people don't even know how to make correct hand signals while driving.

The centre pass in netball is alternated. Everytime a goal is scored the team who didn't have the centre pass previously then has their turn. Usually the umpires use hand signals to show whos centre pass it is anyway.
