There are many signs.

Out sign: When a line referee puts his hands directly in the air at a 90 degree angle it is out.

In sign: When the line referee puts his hands down facing the ground and close together so his palms are facing down the volleyball is in.

Time out: When a coach is standing up with their hands making a T in the air, it signifies the referee that the team is in need of a time out.

These are just the big important signs in volleyball. There may be special symbols your team or coaches come up with for different plays and what not, but these are the main ones.
