You don't have to be behind the line off scrimmage to kneel the ball. Anytime you kneel a football you are giving up your right to advance it (Though you may not be downed yet). Therefore you can kneel it as far back as you want. If you were on your opponents 5 yard line you could snap the football as the QB and run back 90 yards (perhaps to burn more time) and kneel it then.

Well, first you need to try blitzing. And here are the controls to tackle. Regular tackle:L3, Dive: Square, Strip Ball: R2, Hit Stick: R3. Try skill drills. Cover Recivers. Run toward the QB and tackle him. Tackle the recivers before they get the ball. THat sometimes will be a penalty.
One reason would be that most quarterbacks in the NFL are right handed. The left tackle is responsible for protecting the right handed quarterback's blind side on passing plays unless, of course, the QB is rolling left. When I played football, our coach taught us that we always watch the runner's (or qb's) hips, because that gives away what direction he'll run. Don't look at his legs, it will confuse you; look at the hips. Then you lean in that direction to make your tackle. So, you watch the runner's hips and lean that direction to tackle him.
A QB-PP is a pocket passer quarterback and then you have QB-DT which means a dual threat quarterback.
