I assume by this you mean curveballs so these all the ways to throw different curveballs:

Curveball: Grip the ball like a two-seam and then put your fingers off-center so they're on the right seam, then snap your wrist hard off to the side. This can be very damagaing to your elbow if you're not mature enough and if you throw to many of them, can still be damaging even if you're old enough.

12-6 Curveball: Take the curveball grip and then move the ball up so your fingers are on the right seam of the horseshoe. PRESET your wrist in a position as if you're throwing a football. Then come straight down. This is much more safe than a curveball although with your fingers off-center you will probably come off very slightly. I would still not recommend throwing it if your not old enough but you can most definetly throw it with hardly any risk once you're old enough to.

Spike Curveball: Take a four-seam grip and then curl your fingers back so your fingertips are pressed hard into the ball. Then move your hand up so your about 3-4 of the way up from the bottom seam to the top and then throw straight down. It will have movement like a 12-6. Most pitchers have more success with a 12-6 but others have a better spike so you should definitley try it. This is completely safe to throw at ALL ages.

Knuckle Curveball: Position your index and middle knuckles so that they're on the bottom of the horeshoe seam and the thumb underneath. As you release flick your fingers forward. This will have curveball-like movement and is safe to throw at ALL ages. However, it could seriously mess up your form so be careful of that.

The best way to recognize a breaking ball is to pick the ball up immediately out of the pitcher's hand. Usually you can spot that the pitch is a breaking ball by the spin of the ball. Sometimes you can tell a breaking ball is coming even before the pitch is delivered by watching the habits of the pitcher - whether it be before or during the delivery of the pitch. Obviously, you must attentively watch the pitcher to pick up on these kinds of things. The pitcher slowing up towards the end of his delivery is a common way that you can see an off-speed pitch coming before the ball is actually released. Another good way to pick up the breaking ball is to watch the pitcher's grip on the Baseball as he is delivering the pitch. Many pitcher's tend to throw the breaking ball with two finger's side-by-side on the baseball with their thumb underneath. The best way to hit a breaking ball is to keep your weight back and let the pitch come to you. A common tendency among most players is leaning forward too soon when the pitch is realeased and then you are left swinging with only your arms. This causes you to get much less power behind your swing. So keep your weight back and wait for the pitch to break. Then you just have to go with the pitch. Meaning, if the pitch is outside and you are a right-handed hitter, you should try and drive the ball to right field. Same as if it is inside - try and pull it to left field.

a breaking ball is simply any pitch that curves, dips, dives, moves or does anything but go in a straight line. Curveballs, sliders, sinkers, slurves, screwballs and gyroballs are all examples of breaking balls.

Note that changeups do not count as breaking balls, because their purpose is not to confuse the batter with a change in direction, but rather a change in speed.

Knuckleballs are sort of a combination of offspeed and breaking balls, and I'm not sure what an eephus pitch is.
