For professional football (NFL), it is called a 'bye' week. I've seen that terminology used for College Football as well, in addition to "off week", etc. The terminology from skipping a round in a tournament is borrowed due to the weekly-periodic nature of a football schedule (as opposed to the more chaotic schedules of other sports).
