You can either loosen the bolt holding the trucks to the base of the board, or you can buy a longboard skateboard, which will turn a hundred times better than you could make any street skateboard turn.

one of the best ways to stop it from turning on its own is to tighten the trucks with a skate tool or a wrench so if you try to wobble it it won't move at all. But if you are used to leaning to turn then it might be pretty hard
There are two main ways to turn on a skateboard while riding on flat ground. The first is a carve, or a lean turn. This is performed by leaning your weight to one side or the other of the skateboard as you move forward (or backward). To do this, the trucks must be loose enough to turn. However, the weight of the rider determines what is loose or tight. For instance, a 200lb skater will be able to turn on a set of trucks much easier than an 80lb skater. All skaters like their trucks set to different degrees of looseness. There is, however, a general consensus that more control on the part of the skater is possible with looser trucks.
The second way to turn is by performing a kickturn. This is generally done by leaning your weight on the tail of the skateboard, thus lifting the front of the board into the air and pivoting on the rear wheels. This can be done to any degree. On flatground, minor adjustments in direction can be made by multiple slight kickturns, which is known as a tick-tack, or tick-tacking. It is general accepted that carve turns look better than tick-tacking, although in Skateboarding there are no rules, and each rider is free to do whatever they like to do.
Hope this helps.

Slow down and then hit the back of the board and it should pop up that's what i do or you can put your foot on the ground.
