A backstretch is a part of a racecourse which is the farthest from the grandstand and parallel to the homestretch.

Depends on the distance of the race and the length of the track itself. On most tracks, sprints (shorter races) start on the backstretch. On most tracks, routes (longer races) start near the finish line and go around the track one time.
Greyhound tracks in the United States are uniformly a quarter of a mile in circumverance. The most common race distance is 5/16 mile. This starts down in a chute that extends beyond the start of the home stretch. The next most common distance is 3/8 (6/16th) of a mile. This starts near the far turn on the backstretch. Other common distances are 7/16th and 3/16th, both of which start near the head of the backstretch. Rarely, a 9/16 distance race is run, sometimes known as a "Super Marathon". It begins in the same place as the 5/16 race does, and the greyhounds make two full circuits.
Rusty Wallace ran a fast lap at Talladega with the restrictor plate taken off. He had an average speed of 221.00 mph. After the lap, he told Nascar officials that there was no way the drivers could drive that fast in a pack of 43 cars.

The safety these days is incredible, if anyone remembers the 2007 Aaron's 312 at Talladega, when Kyle Busch got turned backwards by Tony Stewart, and barrel-rolled like 5 times in the backstretch grass, well if you have he walked away in a split second, thought he did crack his HANS device during the crash. But my point is that you probably won't see drivers die from crashes these days, the safety of the cars is excellent, cars can flip and tumble, and the drivers are still A-OK.

For each race a greyhound is given a comment in the Official Race chart giving a brief description of how it ran it's race. Some are more generalized than others, but, to answer the question, this comment is stating where the racer had some trouble in its race. The "escape turn" is the 2nd turn on the oval that when running counter clockwise has the dogs running on the backstretch of the track. Sometimes there's some body contact and it can throw a racer off it's balance. In a race decided in around 30 seconds and with participants running in excess of 45 mph at some points, any jostling can slow a dog down significantly and have an adverse effect on it's success.
