Becuase you're flying at such a large height and you could easily fall off your flying broomstick. Also, because animated balls are flying at your head (called Bludgers), *trying* to knock you off your broom and maybe break a bone or two in the process. Also, going at high speeds is dangerous, as you could run into anything.

There are many fouls possible, such as 'cobbing' excessive use of elbows. And while you are not supposed to use your wand during the match, the audience sometimes does and referee's have often disappeared.
