There are many types of paintball guns ranging from Semi-Automatic blowback guns to Electropneumatic guns. The simplest to explain is the Semi auto blow-back. First, the pressure from the tank builds up and flows through either a steel hose, or macroline. Then a certain amount it builds up in the valve. Then the trigger is pulled, pulling down a sear, which releases the striker, which is pushed forward by the mainspring towards the vavle. In Tippmanns there is a forward bolt, attached to the striker with the valve in the middle, where in spyder types the bolt is above the striker with the valve in front. At the same Time the Bolt pushes the balls past the detents, which keep it from falling out, and the striker hits the valve pin, which allows air to flow through the bolt, pushing the ball out of the barrel at high speeds.
Paintball is a game in which two teams of varying numbers of players (anywhere between 1v1 and 1000v1000 in large scenarios) use compressed air guns (markers) to shoot pellets full of paint at the other team members, usually in either Elimination (one team has to mark all of the other team's players to win) or Capture the Flag (with two flags or one flag, usually eliminating the other team will also win the game). The rules of paintball vary on what your are playing, so be sure to ask for more specific instructions on game type when you get on the field. The most common type however is elimination, or team deathmatch. Its a one shot out(most likely). Usually the splatter has to be larger than a quarter, or break the hopper open. (In most cases gun shots dont count). If you are unsure if you are out or not, you should be able to call a paint check. A rule to know is dont wipe off paint to avoid getting out. The only time you should ever wipe of paint is when it hits something near you, and splatters on your goggles or gun, imparing vision or making your gun covered with paint goo. As i said before, rules vary with location and game type so always ask for the rules from a ref if you are unsure. Paintball is usually played in an open field where there is a lot of space with no houses or businesses around. After it is decided how many players there will be, they are then split up into two teams. The teams should each wear separate colors for players to be able to tell their team mates apart from the other teams players. Once the teams are set, they start at a home base and throughout the game begin to shoot at each other with paintballs. After someone has been "hit" by a paintball they are out of the game and should remove themself from the playing field. The team that has a member left standing without having gotten hit is the winning team.

Also, many recreational woodsball fields frown on the practice of "bunkering" where another player is shot from a close distance. In these instances many fields prefer the player be given a chance to surrender before being shot from a distance that may cause serious pain.

In woodsball, it is the same thing except you are not trying to eliminate everyone on the opposite team quickly. Some woodsball tournaments can last several hours. Lastly, there is scenero. You are given a scenero (capture the flag, capture the headquarter, etc.), and you must simply accomplish that mission without getting shot, but shooting enemy players. Good luck.
