The ref tells them at the start of the match, the matches are not scripted just the storyline is.

The matches are not choreographed!!!! The only thing the wrestlers know is which one of them is going to win at the end of the match. The match itself the wrestlers talk over what moves they want to do in the ring, but once in the ring they call it as it goes. I no way are they choregraphed like they are dancers. If they were there would never be any injuries of the seriousiness that occur.
Wrestlers are fighting actors, they do not know everything, they only pretend to know.
Like almost every sports entertainment match, the ending is planned, certain spots are planned in the ring and both wrestlers know what are expected of them in the match. That being said there is a fair amount of freedom the wrestlers have to perform (ie do we start punching or do I do a snapmare)
Yes it is decided beforehand who will win the match but it is up to the wrestlers to decide on what happens in the match moves etc.
