I guess they figured there were already a lot of universities that use an M as their logo--Michigan among them--so they'd use a U (for University) as their logo.
If you are referencing a picture, but still drawing your own concept I believe you can call it your art. However, if you reference a picture by re-drawing exactly what you see, you cannot call that your own. Even though you didn't hold your paper right on top of the original it's still a form of tracing.

In 1962, the Steelers equipment manager Jack Hart applied the logo to the helmet (at that time the helmets were a solid gold color) and the Steelers were uncertain how it would look. So he applied them to the right side only. Later on, even after changing the helmet color to black, they left the logo on the right side only, due to the teams new found success & uniqueness of the logo. The Steelers are now the only team with a logo on only one side of the helmet.
