Well, men do parallel bars in addition to the high bar. It is kind of like an alternate event for the gender, like the balance beam is for the women. Men compete on the high bar instead of the uneven bars because of the differences in the structure of men and women's bodies. Women posess a great amount of flexibility along with strength and it is much easier for them to switch from the high bar to the low bar. Men rely more on their strength than their flexibility and it would be extremely hard (and painful at times) for them to transfer from the high bar to the low bar or vice versa.
