Very little impact on the environment is made by ultimate players. Recreationally, players typically just set cones down to mark boundaries and endzones. Professionally, at least at the moment, pre-existing stadiums are used, not causing for any environmental demolition. I suppose the biggest concerns would be painting lines into grass or players littering.
