There are several answers to this, none are correct, none are incorrect

Tiger is one of the priamry animals that Shaolin Kung Fu is based on, Karate was derived from Kung Fu

The Master text of Shotokan Karate , the artist drew an Tiger on the cover. The reason behind this is unclear, however one of the reasons could be that the term Shoto which is the pen name for Funakoshi the founder of Shotokan, means pine waves, which is a sound made in the pines as wind blows through them, the same sound is made as Tigers stalk through them.

The Tiger on this Cover has 30 stripes, which may have represented the 30 kata in Shotokan (including the Teikyoko and Ten No Kata)
