There isn't really a set diet for a speed skater, except that they need to eat all three meals and make sure that they are all high calorie meals. A speed skater can burn over 800 calories after racing for just one hour, therefore it is extremely important for them to have what is called a 'power breakfast'. Breakfast is the most important meal of the day for speed skaters. A power breakfast can contain anything from pancakes to eggs, bacon, toast with jam, Orange Juice, potatoes, and much more. As long as it contains lots of calories, natural sugars, other essentials, and will give the athlete long lasting energy, it is acceptable.
They are expected to eat breakfast every day, and the other two meals would be a good idea too. They are also supposed to eat an especially nutritious and high calorie breakfast the day of a race. They should stay hydrated with lots and lots of water, and also juices to keep sugars in their system. This will give them more energy.
