Any form of martial art can be used in UFC. As long as you don't use any illegal techniques it doesn't matter.
Shorin Ryu became established as a separate style about 1900. The roots can be traced much further back than that. It was Shorin ryu that Gichin Funikoshi took to Japan and used as the foundation for Shotokan Karate.
Pretty much all the throws, arm locks and head locks (which turn out to be arm and head breaks) are found in Jujutsu. The strikes such as kicks, punches and elbow strikes are from various karate styles (which may also encorporate some of the throws like the style of karate I do called shotokan, which use some throws). The various blocks are found in both karate and jujutsu, but mainly karate. Wesley Snipes is a 5th dan in Shotokan karate along with other Martial Arts, which is why he looks so confident performing moves that take years of practise to master.

It depends on the style of karate, and most styles have more then one. For example, Tang Soo Do has only the parry block (the rest of the "blocks" are actually strikes), yet tae kwon jitsu has low x-block, high block, reverse outside block etc.
The outer block or Soto-uke is used to block punches and push the opponents arm outside his body, so leaving their stomach free to punch.Hope that helps
Japanese Judo was the first martial art to introduce the colored belt ranking system as a visible indication of the students progress. The connection deals with a long history. Taekwondo is related to Japanese karate, many of the kata or forms used are based directly on the kata learned in Japan. Japan got the kata from Okinawa where they were developed. The forms in Okinawa were based on kung fu techniques that they learned from the Chinese.
