You could but it would be very risky. I have seen games where both quarterbacks were injured and the team had to use a running back to finish the game (Washington/Philadelphia, 1990 ... the 'body bag' game). I can't say that I know every player on every NFL roster but I can't imagine there is a team that carries less than three quarterbacks on their 53 man roster.

Regulation time for a hockey game is 60 minutes (three 20-minute periods). If the teams are tied after regulation time, overtime rules vary by league. In NHL regular season games, they play a sudden death 5-minute OT period with the teams playing 4-on-4 instead of 5-on-5 (reducing the players opens up the ice in an effort to produce a goal that will end the game). If the teams are still tied after the 5-minute OT period, the teams then move on to a three round shootout. After three rounds, the team with the most goals scored wins the game. If they are still tied after three rounds, then the shootout moves to sudden death and the teams will alternate shooters until one team scores and the other team fails to score. In NHL Stanley Cup playoff games, there are no shootouts and all OT periods are 5-on-5, sudden death, and 20-minutes in length (a regular period). Teams continue playing until a goal is scored. The longest ever NHL game was a triple OT, 116 minute-30 second, 1-0 win by Detroit over Montreal in 1936.
Actually, there were only two. Joe Kapp was the starting QB in Super Bowl IV and Fran Tarkenton was the starter in Super Bowls VIII, IX, and XI.
There are dozens of quarterbacks that have started playoff games with different teams. Two are Brett Favre and Chad Pennington.
As of Week 12, Aaron Rodgers of the Green Bay Packers is leading all quarterbacks with 45 carries, 247 yards, & 3 touchdowns.
Same as men's - 90 minutes regulation time (45 minute halfs). If needed, 30 minutes of 'extra time' (15 minute halfs), and if score is still tied, penalty shoot-outs.
