What is the difference between a hunt saddle and a dressage saddle?
There's no such thing as a show saddle, unless you mean a saddle you use exclusively for shows. A dressage saddle has a very deep seat to help the rider sit and a long, straight saddle flap to accommodate the longer leg position. The girth straps are also quite long so that the short dressage girth does not hinder the leg laying flat. Typically the saddles used in hunter/jumper shows are of medium depth with a more forward cut flap.
Do I need a dressage saddle for training level dressage?
I don't think there are any restrictions on the type of saddle you use. Bits are a different matter. Make sure the bit your using is allowed. Although a dressage saddle will help put you in the correct position, if you don't have one don't let it stand in your way. Keep riding and practicing. Later on as you move up in competition, there will be time to think about changing saddles. Have fun.
Is using a western saddle harder to cantar in if your use to a dressage saddle?
no!! western/stock saddles are so much easier than dressage saddles. as soon as u r in a westerns saddle, you will never go back to dressage. and theyre practically impossible to fall out of. but it is possible lol definetly not! western saddles are so much more comfortable than a dressage saddle. it is harder to fall out of, but when you do, falling forward and to the side really hurts your inner thigh, sometimes not able to get back on. ;)
What size saddle pad?
For a western saddle most pads will be about the same size unless it's for a pony saddle, which will be much smaller. English saddle pads can vary significantly. Since there are different types of English saddles the pads will correspond with their individual shapes. A dressage saddle will have a dressage pad, likewise hunt seat, saddle seat (with a 3 or 4 inch cutback). Whatever the size or shape, make sure that the pad is thick enough that it protects your horse's back and that it fits right so it won't slip or rub.

No. Hurdle saddles or jumping saddles have knee rolls and a deeper seat which helps to hold the rider into the saddle. Dressage saddles are flatter and provide closer contact with the horse through the leg area. The seat is does not have the shape a jumping saddle has. It doesn't cradle the rider like a jumping saddle.

It's so that your rear doesn't fly out of the saddle wile in flight. (Dressage saddles have even higher 'backs' so that you don't bounce as much in the sitting extended trot).
