micheal phelps IS RUMORED to eat "For breakfast : Three fried egg sandwichs loaded with cheese, lettuce, tomatoes, fried onions and lots of mayonnaise. Two cups of coffee. One five egg omlet. One bowl of grits. Three slices of french toast topped with powdered sugar. And to top it of with three choclate chip pancakes For lunch : One pound of enriched pasta. Two large ham and cheese Sandwiches with mayonnaise on white bread. And then washes it all down with 1,000 calories of energy drink For dinner : Another pound of enriched pasta, A full cheese pizza. And 1,000 more calories of energy drinks and he doesn't choose from it he eats it all"
In actual fact, in his own words, the above is an exaggeration. He did the breakfast thing, but that was a few years back, and he didn't keep doing it for whatever reason, saying that he has scaled back on it. He was directly asked about that lunch and that dinner, and he said he has never eaten either one of those before in his life, ever, let alone on a consistent basis.

the closest we can get to a reliable answer to this question (with regards to while he was training) is "I eat whatever I want, whenever I want.", but you should watch the video. don't trust anything you read about his diet because it is sensationalized BS.

A lot. Competitive swimmers burn through a lot of calories and need to eat great amounts of food. Specifically though, it varies depending on the individual, but I imagine foods high in carbohydrates would be common in most swimmers diets.
