In Madden 16, to player lock, you need to select your desired player before the play starts. Once the game is in progress, press the right thumbstick (R3 on PlayStation or the equivalent on Xbox) to lock onto that player. You will then control only that player for the remainder of the play. To unlock, simply press the right thumbstick again.
