The number of balls depends upon the game. All balls use a cue ball plus 7, 9, 15, or 21 numbered balls.
It depneds on what the game is. If it is football, basketball, tennis, and some other games, there is just one ball on the floor at any one time. If the game is pool, there are 15 balls plus the cue ball. Other games played with balls may have other numbers of balls.
Every ball pitched is taken out and replaced.
8-ball is played with total 16 balls. Out of which 1 is a cue ball, 7 are stripped balls, 7 solid colored ball and the remaining one is the black ball i.e. numbered 8. This is the main ball of this game and so the name of this game is 8-ball.
In 8 ball pool there are 16 balls on the table, a cue ball, 8 ball, 7 solids and 7 stripes although they could be red and yellow etc. In 9 ball there are 10 balls on the table, cue ball, 1-7 solid, 8 ball and striped 9 ball.

There is not set number of pitches before a ball is removed from the game. A ball is removed after it is scuffed, knocked out of round, or becomes too dirty. In Major League baseball, many balls are removed and replaced by new ones, while in minor league, or amateur ball, sometime, balls that have been removed from the game may be placed back into play after being cleaned.
