I'm not sure on the red, but the 49ers took the gold color from the gold miners of 1849. The miners were nicknamed the 49ers, and that's where the name comes from. For the red, I would think they took it from the California Flag which has a red stripe at the bottom.
The colors of the San Francisco 49ers are Scarlet Red, Metallic Gold and White. Since 2009, the 49ers colors are Red, and Metallic Gold with white as an accent or trim color. This current shade of red is lighter than the previous Cardinal Red, but darker than the Scarlet Red that was worn in the 1980s.
The Baltmore Ravens, whose colors are purple, black, metallic gold and white, will wear white jerseys for Super Bowl XLVII. The San Francisco 49ers, whose colors are red and gold, will wear dark jerseys.

Chinese people usually tend to wear red instead. Red means good luck. A reason Chinese people may wear gold is that gold is valuable. So they wear it to represent good fortune in the upcoming year.
They were referred to as "49ers" because that was the year the California gold rush started (1849).
