Tipperary won the first All-Ireland Final in 1887, but there was no Munster Final that year. The first was in 1888 which was won by Cork. At that time it was actually club teams that represented counties, so it was a club called Tower Street that played as Cork that year. Thurles had represented Tipperary in 1887.

GAA refers to the Gaelic Athletic Association, the governing body of Gaelic Football and Hurling, not to a sport. The GAA was founded in 1884, but its sports pre-date that by centuries. It is not known for sure when the first games of each were played, especially Hurling. There is a record of a Gaelic Football match in Meath in the year 1670, but it would not have been the first match ever. So it is impossible to say who were the first two teams to play either Gaelic Football or Hurling.

Limerick won the first All-Ireland Championship, which was the 1887 All-Ireland Championship. At that time counties were represented by clubs, and it was a club called Commericals that actually won the final. They beat Young Irelands from Louth.

The first All-Ireland Hurling Champions was the 1887 one. At time clubs represented counties, although the titles are credited to the modern total for county wins. The winners of that 1887 finale, actually played in April 1888, were Thurles, representing Tipperary. So Tipperary are regarded as the first All-Ireland Hurling Champions. They now have 25 titles.
