The three stars on the Pittsburgh Steelers helmet represent the materials that were traditionally used in the steel-making process: coal, iron ore, and scrap steel. These materials are significant to the team's history as Pittsburgh was once a major hub for steel production. The logo was created in 1962 by U.S. Steel's Roy Kohler.
They never had one on the left side. Just on the right. It also used to say Steel, instead of the Steelers name that you see today.

In 1962, the Steelers equipment manager Jack Hart applied the logo to the helmet (at that time the helmets were a solid gold color) and the Steelers were uncertain how it would look. So he applied them to the right side only. Later on, even after changing the helmet color to black, they left the logo on the right side only, due to the teams new found success & uniqueness of the logo. The Steelers are now the only team with a logo on only one side of the helmet.

The Steelers are named for the steel-making that Pittsburgh has been known for many years. The emblem on their helmets is actually the company logo for United States Steel corp. The San Francisco 49er's are named for the gold miners that poured in that area after the gold strike of 1849.
