It's all based on the skill level and setting for the game. In high school, Varsity plays best of five, while JV and Freshmen teams play best of 3. NCAA plays best of five.
If you are in a tournament setting you usually play best of 3 regardless of age/skill level. In pool play of tournaments, they are sometimes even play just two games for efficiency of the tournament.
