A team has plenty of flexibility on how many players to carry on their roster at each position, but there are limits as to how many are on the field at any given time - American Football only allows 11 players on the field at a time. Below are typical numbers:

When on offense:

1 quarterback

1 center

2 guards (usually 1 left-guard and 1 right-guard)

2 tackles (usually 1 left-tackle and 1 right-tackle)

1 or 2 tight ends - if 2 a running back or receiver is removed from the lineup

Usually 2 Wide receivers but can be from 0 to 5 - none for a "full-house" formation with 3 running backs and 2 tight ends, 4 or 5 for a spread offense - possibly with no running back.

Usually at least 1 running back but possibly none when running a spread offense. The "wishbone" used by some college and high school teams uses 3 backs - 1 fullback and 2 halfbacks with 1 wide-receiver and 1 tight-end or 2 receivers or 2 tight-ends.

There must be at least 7 players on the line of scrimmage

When on defense:

1 or 2 defensive tackles - if 1 (like a 3-4 alignment) he's a nose-tackle, a 4-3 defense uses 2 defensive tackles

2 defensive guards (left-guard and right guard)

usually 3 or 4 linebackers - in a 4-3 defense it's 1 middle linebacker and 2 outside linebackers in a 4-3 it's 2 inside linebackers and 2 outside linebackers.- although in pass-prevent one might be removed to add an extra defensive back or 2

Usually 2 safetys

Usually 2 cornerbacks

In pass-prevent a linebacker and/or lineman might be pulled to add a "nickle-back" (5th defensive back) even 2 nickle-backs (called a dime package because it's 2 nickles)

On special teams

For punts one team initiates the play as offense but switches to defense once the ball is kicked. The receiving teams starts on defense, trying to block the punt, then switches to offense to receive the ball and block for the kick-receiver.

For a punt, the quarterback is replaced by a punter and the center with a long-snapper.

The receivers and running backs may be replaced with "gunners" whose job it is to run down whoever is receiving the kick unless they call for a fair-catch. The defense will employ a jammer in place of a cornerback or linebacker to

For both field goals and punts there is usually also an upback in place to protect the kicker from any defender that makes it past the offensive line before the kick is made.

On kickoffs the offense will have a kickoff specialist (who may also do other kicking duties such as punts, field goals, or extra points - but not necessarily). The rest of the offense is essentially playing gunner and and safety positions. The receiving team will have deep receivers and possibly some players in intermediate positions to catch the ball if it is kicked short and block for the kick-receiver it is kicked deep (which it usually is). The rest of the team are blockers - like guards, tackles, and tight-ends.
