There are 6 players on the ice for both teams. 3 forwards 2 defensemen and 1 goalie. Hockey teams usually dress 22 players or have them on the bench so to speak 12 forwards, 6 defenseman and 2 goalies. The other goalie is the backup, in case the starting goalie plays badly

If you mean just the NHL, there are upwards of 700 players, or more, who might play in the NHL during the hockey season. However, there are a myriad of minor leagues, junior leagues, and college leagues just in North America. Count in International leagues throughout the rest of the world, and players number well into several thousand, I'm sure.

During regular play there are 12 players on the ice. Five regular players and one goalie for each team. During powerplays that number can decrease to a minimum of four players for one of the teams (2 man advantage).
