Most NFL teams have open tryouts in late winter or early spring. If you qualify you might be assigned to a semi-pro league or European football, and like Baseball you try to work your way up. The only player I know of that did this is Johnny Unitas back in the 50s.
I think you have to request or see if your desired school has open tryouts.You may get stonewalled(Ignored)for various reasons so be prepared for possible rejection for simple things such as experience.
