The main medium through which to watch paintball is through live webcasts during events (which are almost exclusively of national tournaments, featuring professional teams).

tournaments i do not know. but ambush paintball park is having 3 modern warfare games in 2012. i recommend looking at them. there a ton of fun
5 man paintball is a speed ball tournament configuration with 5 players on each side. Generally tournaments will announce the team size as 3, 5 man.

Currently there is no international league that country teams face off in. There are only country, and region wide tournaments and leagues.
No there are a lot of paintball fields and stores in California in fact the big tournaments are held in CA every year
