I believe that title goes to Mexican Michelito Lagravere, a 14 year old (2012), who became a professional (Novillero) at age 12. He fought his first animal when he was 4 1/2 years old.

There is no age restriction in Mexico but in Spain you must be 16 years old to fight bulls.
