Because the earth is round(ish). Copying the features of a round surface onto a flat surface introduces distortions. You can try it out with an orange, peel it and try making the peels into a flat square. Not possible, you get gaps and holes. On maps we don't have gaps (but we should have) instead the image is stretched to cover the square area.Because you could actually see the waterways and continents much better.It is more realistic.
