I think it's because the vitamins that makes the cabbage red will be gone in the process of cooking
1 medium head of cabbage, weighing about 2 pounds, makes about 8 cups shredded. Depending on the ingredients you add and how much of each, to make cole slaw, you will have 9 to 10 cups of cole slaw.
That is do to breaking down of vegetable enzymes, alkaline and proteins during the cooking process. If you were to add a pinch of baking soda or cream of tarter while cooking cabbage. It would help reduce the Oder and also help the cabbage keep its colour. Also the longer you cook cabbage the more pungent smelling it becomes.
Nutritionally, not a lot. Choice of cabbage between red (a sort of purple and white cabbage) and white (pale to darker green and white) really depends on the dish you're making and the colour you think will look good at the end. So, you might use red cabbage in, or to accompany, a blandly-coloured dish and white cabbage to go with something more robustly-coloured.
A buffer absorbs or releases excess hydrogen ions, making the solution hold at a steady pH. Since red cabbage indicator makes a good pH indicator, it has a neutral pH. any amount of acids or bases added would change the pH of the red cabbage juices. If it made a good buffer, it would not make a good pH indicator.

the rotting
Plants stop rotting when conditions that promote rot, such as excess moisture and the presence of fungi or bacteria, are removed. Proper ventilation, avoiding overwatering, and removing any decaying matter can help prevent rotting in plants. Additionally, maintaining proper plant hygiene and using well-draining soil can also help prevent rot.

yes you can or you can pickle it . canning anything will help it to not spoil.... because the air has toxins in it that makes your food rot and when your cabbage isn't getting at the air it doesn't spoil.
