Can you put a one hole faucet over a three hole sink?

It would be an unlikely event that you have something odd or vary old that may not work. Faucets are standardized so that they can be installed with most any sink that you may be installing or are using.

Yes. A single hole faucet will either use the center hole for the supply lines and the outside two to hold it down or it is held down in the center also and the other two are for the spout and sprayer with the fourth hole if it is there for a soap dispenser.
