Dolphins were in the Circus Maximus because they were symbols of the god Neptune. Neptune, god of the sea, was also the god of horses. The dolphins and eggs were used as lap markers, one each being removed after each lap of the race had been run, giving the fans and the drivers an indication of what stage the race was in, and how many more laps to go.
