There are many pro Water Polo leagues throughout eastern Europe, also now spreading through Western Europe, whilst in the US of A it is played at a semi-pro level. These include the Italian seire a and the Greek league- whatever that's called- and countries like France and Spain have also adopted semi-pro leagues.

There is no elite "league" to speak of like MLB or NFL. The world governing body for swimming is FINA, and the United States governing body is USA Swimming. I do not know about FINA, but I know that USA Swimming holds very high level meets such as nationals. A national meet is restricted only to swimmers that make the national cut time (which is ridiculously fast), and spectators must pay to attend the meet. In a way it is a professional competition. There are only a handful of swimmers that swim for a living. No swimmer is salaried, instead there are only endorsements. Endorsements are not crazy in swimming like they are in more popular sports (LeBron-level $90 mil isn't coming anybody's way any time soon)
What do you think they do in the Olympics?
Actually while Olympic and other high level gymnasts may receive sponsorship money there are no competitions in gymnastics with cash prizes and it is a purely amateur sport. The only way to earn money through gymnastics is as a performance art.
As of May 2013, the sport of gymnastics is being revamped with the addition of the Professional Gymnastics Challenge! Olympic, World and National Champion gymnasts will compete in a US versus the World skill-for-skill battle! Athletes compete for prize money and bragging rights. The first Pro Gymnastics Challenge will take place on May 10 and 11 (as a two-part series), 2013, at the Stabler Arena in Lehigh Valley. The event will also air on ESPN2 on May 20, 21 and 22.
