They actually have three.

Bucky is the name of the gigantic white horse on the top of the south stands.

Thunder is the actual horse.

Miles is the person in a costume that resembles the logo.

Although no official stance has been given for the multiple mascots, it can be presumed that Miles is in place so that the fans and particularly children (or intoxicated adults) don't spook the actual mascot, which is indeed a very highly bred horse.

It's likely because the Broncos don't want a bunch of rowdy fans messing with the actual horse (Thunder) and they can't interact with Bucky (the big white horse on top of the stadium - because it's a statue).
