The Amateur Hockey Association of Canada was formed in 1888, with four teams in the league. Teams were located in Montreal, Ottawa and Quebec City. This is the first known organized (and official) league in Canadian history. However, there were most certainly other non-organized leagues with teams that played before 1888. If anyone knows what these teams were please add to this answer.
I know the Ottawa Senators were the first team in Ottawa, and they formed in 1883.
The first recorded description of Ice Hockey in Canada is from 1825, but it wasn't until 1875 that a puck (made of wood) was used, rather than a ball, or "Bung". That game in 1875 was the first organized indoor game, at Montreal's Victoria Skating Rink, and was played between two teams of 9 players from McGill University.
