One way this occurs is when a player or players are injured and their status for the game is unknown. The bookmakers, who are in the business to make money, don't know how to set the point spread because they don't know if the player(s) are going to play and, if they do play, how effective the player(s) will be in the game.

An example in the NFL would be in Week 6 of the 2010 season with the Packers game against the Dolphins. Packers QB Aaron Rodgers suffered a concussion in the previous week's game and his availability for the Dolphins game was unknown. Since the QB position is very important and Rodgers is a very good QB, there would be a rather large difference in the point spread if Rodgers plays in the game vs. if he doesn't play in the game. Since the bookmakers are in the business to make money and they don't know how to set the point spread because they don't know if Rodgers will play, they take the game off the board and accept no bets. This insures that they will lose no money.
