Everywhere in Australia the age is 15, and it is absolutely necessary to present a photo I.D wherever you play. You need to be 18 and hold a Firearms Licence to purchase and own a paintball marker, and all firearm safety laws must be followed(Eg, Secured Case etc.)
Also, seeing as your in NSW, might I suggest Action Paintball in Sydney? It's considered one of the best in the country. Also, you may want to head up to Ipswich (West of Brisbane, QLD) for the NPF field, because I have personally been there, and it is incredibly fun.

The legal age is 10.
The legal age is 10 everywhere in the US.
No, 11 is the minimum age to play, and paintball guns are not lethal.
There is no legal age to own, but you must be 18 to buy one.
It depends on your meaning of "have". To purchase a paintball gun the legal age is 17. Though if you have an adult present, you may purchase one at any age. So in theory, a 2 year old could have a gun.
18 in the US.
The legal insurance age requirement is 10, but some places choose to raise it to 13.
10 is the minimum for insurance. All legal fields have this limit or more
If the children are not old enough to play at a certified field, then it is more than likely illegal. The average age for a field is around 10 to 13 years of age, depending on state or local laws. The legal age to purchase a paintball marker is 18, but can be used by a minor with consent.
Not legally. The legal age in most part of America is 10,but to be safe play at 12:)
