A Down and Back is a race in which riders run to the far end of the arena, turn around and run back to cross the finish line.

This is a very bad problem, as you seem to have experienced. Instead of pulling back on the reins, take just one rein and pull on it to make the horse turn around. If he starts speeding up, catch him before he is running, and make him go the other way by pulling on one rein. In addition, take some time with your horse if they like to race back to the barn. Each time he decides to race back, turn him in the opposite direction and work him. Ask for figure 8's, side passes, back ups...anything that will get him to realize that if he wants to rush back, he will be put to work. Don't ever let your horse run back to the barn if you can avoid it. It sends a bad message. I do this with my horse when he tries to eat while trail riding and he has stopped nibbling completely.
Yes a man can ride on the back of a race horse, that's what jockeys do during the race. A retired racehorse is also capable of carrying a man on it's back once it has been retrained for another job.
There is no real word for an injured horse that can't race. Most injured racehorses are either retired to stud / broodmare, retrained as riding horses, or possibly put to sleep.

Ive personally seen blind horses do many things jumping, dressage, trail riding, etc. I would think it dangerous for both the horse and the rider but yes it is possible for you to race a blind horse.
Race horses start at about two although this is bad for them. If you are looking to start a horse you should wait until they are about 4 to start riding them. If the start too early it can cause problems later in their life
A jockey is someone who races horses, an equestrian is someone who rides them.
